I like black rice flour. The black rice flour of Wuqiao in Ningbo not only makes a lot of rice cakes, rice buns, but also bread. The high water content can make the rice flour high but not affect the fermentation. The traditional European baking method of hard bread at high temperature. The crust of bread is crispy and the inside is more fragrant and soft. It is the credit of black rice flour. My machine - Prairie 5 kg kneading and mixing machine. The best temperature for the 35 litre oven is 270 ℃. If you don't have a high-temperature oven, you can bake it in an ordinary oven for 23 minutes at 250 ℃. The trick to check the second fermentation of European bread is to shake the dough on the baking pan like tofu.
Step1:Ingredients - red dates to the core and cut into the sake. I use Erguotou. Soak for 15 minutes, take out, rinse and drain. Peanuts are shelled for later use.
Step2:Preparation - 70g of coarse-grained black rice flour is mixed with 120g of water to make a paste.
Step3:Machine kneading - add yeast flour into the flour mixing machine for 10 seconds, and then add black rice paste. Beat the flour at 2.5 speed for about 6 minutes until it is firm. See the picture below.
Step4:One time fermentation - the dough with gluten is gently kneaded into a circle and fermented 1.5 times larger. When I did it, I finished it in about 30 minutes at 20 ℃ and 75 humidity.

Step6:Split and reshape - divide into 2 groups. Knead into circles. The skin is compact and smooth.
Step7:Reshape - roll it into a rectangle. Press the thin edge to close the mouth. Then spread the peanut and date meat on it. Roll up the mouth and rub it into a 15cm long strip.
Step8:Second fermentation - the second fermentation is carried out to 2.5 times the hair after the long strip is formed. The way to check the fermentation is to shake the dough on the baking tray like tofu.
Step9:Bag cutting - sift and sprinkle dry powder. Cut long strips with a knife. Then ferment for another 35 minutes.
Step10:Bake - preheat oven 270 for 5 minutes. Spray or sprinkle a little water on the bread before entering the oven. I spread it by hand. Bake for 1315 minutes. Watch out for the last few minutes.
Step11:When it's cold, cut it. It's fragrant. It's full of water. Yes. It's delicious.
