I learned this dish from my nanny and aunt. Grandma has a bad tooth. She likes to eat soft and rotten food. Just as mashed potatoes are my favorite ~ \ (≥ del ≤) / ~ my favorite friends don't have to give it a try.
Step1:Wash potatoes and steam in a pressure cooker for 20 minutes until chopsticks can be pierce
Step2:Mash the potatoes with a spoon after peeling. Add a small bowl of boiling water and press until the mashed potatoes are not so dry
Step3:One long eggplant is washed and cut into section
Step4:Mash the garlic. Cut the scallion into piece
Step5:Take a small piece of butter (that is, a small piece of butter spread on bread) and mix it with mashed potatoes.
Step6:Put oil in the pot (a little bit more, or mashed potatoes will stick to the pot). Stir fry garlic. Minced meat (optional). Stir fry eggplant. When the eggplant becomes soft and the skin turns yellow, pour the minced meat and oil back. Add a small spoon of salt and stir fry.
Step7:Stir fry in mashed potatoes. Add a teaspoon of sal
Step8:Add chicken powder and scallion before cooking.
Cooking tips:Butter can be added but not added. It's more fragrant with milk. But don't add too much. It's greasy. If you want eggplant to be softer and rotten, you can add a little water when you stir fry it. There are skills in cooking.
