Step1:Step one - prepare the ingredients. A round eggplant, some garlic, some green pepper. Tomato sauce, edible oil, corn starch, sugar 2 tbsp, salt 2 tbsp, chicken essence 1 tbsp, soy sauce 2 tbsp, sesame oil. Step 2: peel and cut eggplant, green pepper and garlic. Step 3 - mix a teaspoon of salt into the eggplant. Marinate for 10 minutes. Step 4 - remove the extra water from the eggplant. Sprinkle with corn starch and mix well. Step 5 - take a clean small bowl. Then put corn starch, sugar, chicken essence, soy sauce, salt in turn, and then pour in half a bowl of water. Mix into a bowl of juice. Step 6 - put some oil in the pot. When the oil is 50 or 60% hot, put in Eggplant and start frying. Step 7 - fry until the eggplant is golden, remove and set aside. Step 8 - start another clean pot. Pour in a small amount of oil. When the oil is hot, add tomato sauce and stir fry the garlic to make it fragrant. Step 9 - stir fry eggplant in the pot. Step 10 - put the green pepper into the pot, stir fry evenly. Step 11 - pour the bowl of juice into the pot. Stir fry the juice over high heat. Pour a little sesame oil before leaving the pot.
