Cooking Steps

  1. Step1:Prepare 250g cocoa liquid block, 100g cocoa butter, 100g glucose, 50g cream, 10g cocoa powder, 5g soybean lecithin and 5ml rum.

  2. Step2:Mix 250g cocoa liquid block and 100g cocoa butter into a container without water or oil. Dissolve in 75 ℃ hot water. Keep stirring while keeping away from water.

  3. Step3:The chocolate paste is stirred and cooled to 35.8 degrees.

  4. Step4:After all of them are dissolved, add 10g cocoa powder and 5ml rum to mix.

  5. Step5:Heat the mixed chocolate paste up to 40 ℃ in water.

  6. Step6:Put 50g light cream and 100g glucose into the milk pot and cook over low heat until the glucose is all melted. Slowly pour the cooked liquid into the chocolate. Pour it in and stir until it is all well mixed.

  7. Step7:Sift in soybean lecithin and stir evenly.

  8. Step8:When the temperature of chocolate paste is about 30 ℃, it can be put into the mould and refrigerated for setting.

  9. Step9:Good chocolate.

Cooking tips:1. The liquid pure milk glucose should be completely dissolved and added into the chocolate paste. Stir evenly. 2. The chocolate paste can be put into the mould when the temperature drops to 30 ℃. 3. Adjust the temperature of chocolate. First, heat the chocolate to about 50 degrees in water. Keep stirring and cooling to about 27 degrees. Heat it to 40 degrees in water. There are skills in mixing and cooking.
