Make a bowl of noodles. It's not a kind of tenderness. It is called Zhenmian, which is made by mixing water with flour, adding salt, alkali and clear oil, and then mixing them with wet cloth and pulling them into thin strips
Step1:Prepare ingredients: 200g flour, 120 warm water, 3G salt, onion, garlic, chili powder, soy sauce, vinegar and green vegetables. Put a small amount of bean sprouts.
Step2:Add salt to flour. Pour in warm water. Knead into smooth dough. Seal with plastic wrap. Wake up for half an hour.
Step3:Divide the dough evenly into six parts, knead it into strips, apply oil on the surface, seal the plastic film, and let it stand for about an hour.
Step4:Roll out the wake-up dough. Press the middle of the dough with chopsticks.
Step5:Hold both ends of the dough with both hands. Lengthen the dough a little bit. Then tear it from the middle mark.
Step6:Boil water in the pot. Put the noodles into the pot and cook them.
Step7:Blanch the green vegetables and bean sprouts. Put them in a large bowl for later use.
Step8:Scoop up the cooked noodles and put them into a large bowl with vegetables. Put the prepared chopped green onion, garlic and chili powder into the bowl. Heat the oil in a pan to 80% of the heat. Sprinkle them evenly on the chopped green garlic and chili.
Step9:Add soy sauce, salt and vinegar according to your taste. Stir well. Eat.
Cooking tips:Knead the noodles as much as possible for a while. In this way, you can be skillful in making good dishes.
