Step1:Cut the eggplant into the hob. Put it in the bowl. Pour some oil. Stir to coat the eggplant with oil.
Step2:After the air fryer is preheated, fry it at 180 ℃ for 6 minutes. Turn it upside down in the middle. Or adjust the time according to your own state, as shown in the figure. Put it out for future use.
Step3:Potatoes cut into hobs. The same oil mix.
Step4:Air frying pan 180 ℃ for 15 minutes. Turn over in the middle. It should be like the state in the picture. Put it in the eggplant bowl.
Step5:Cut the green peppers into pieces. Just mix them with the residual oil in the bowl where the potatoes were mixed before. Air fryer 180 ℃ for 5 minutes.
Step6:Hot pot, cold oil, small fire, stir fried ginger and garlic and Pixian bean paste.
Step7:Pour in Eggplant and potatoes. Stir fry.
Step8:Add soy sauce, oyster sauce, salt sugar, and a small bowl of water. Stir well.
Step9:Pour in the green peppers. Pour a little vinegar along the edge of the pot. Stir evenly and you will be out of the pot.
Step10:Serve with scallion.

Cooking tips:Please taste the salt before putting it.. Because Pixian bean paste, soy sauce and oyster sauce are salty.. The potato eggplant treated by air fryer is more absorbent, so pay attention to heating water. There are skills in making delicious dishes.
