The traditional way is to add pepper or spices to improve the freshness. However, it is not suitable for the baby who is still in the stage of light diet. Today, we share a way of using natural seasoning shrimp skin and dried mushrooms to help improve the freshness and flavor. This classic stew will be more delicious and attractive because of the release of amino acids gradually under slow stew.
Step1:Soak the shrimp skin in water for a while. In addition to removing salt and impurities on the surface of shrimp skin, soaking can also help release the fresh taste of shrimp skin better when cooking.
Step2:The dried mushroom bubbles.
Step3:Nanfu is cut into cubes. South bean curd is tender bean curd. The taste is softer and tender than North bean curd (old bean curd). Of course, it's OK to use old bean curd. It's not easy to spread when cooking.
Step4:Blanch tofu for one minute. Remove the beancurd smell. Turn the water to a low heat and then blanch. Avoid tofu breaking in the middle.
Step5:Take it up and put it in cold water. Put cold water to cool and shrink. It can avoid tofu better keeping its shape when cooking. It is not easy to spread.
Step6:Drain the shrimp skin for use.
Step7:Wash cabbage and cut into small sections.

Step9:Hot pot with less oil. Pour in mushroom and shrimp skin. Stir fry to make it fragrant. The fresh amino acids hidden in dried mushroom and shrimp skin will slowly release the rich aroma when heated.
Step10:Add cabbage. Stir fry for about 2 minutes.
Step11:When the cabbage is soft, mix in the soy sauce and color it. Stir well.
Step12:Add tofu. Stir gently. Don't pay too much attention. Stir the tofu.
Step13:Add some water.
Step14:Turn off the fire when the water boils.
Step15:Into the casserole. Use a casserole for the final stew. It will taste better.
Step16:Close the lid and simmer for about 10 minutes until the tofu is soft and rotten.
Step17:If it's for adults or older babies, you can add a proper amount of salt for seasoning according to the taste. But if it's a one or two-year-old baby, it's delicious enough to add two kinds of natural condiments such as shrimp skin and mushroom. There's no need to add salt.
