I made the ribs with brown granulated sugar. The Yellow granulated sugar is colored and contains a small amount of minerals and organic matters. Generally speaking, yellow granulated sugar is suitable for flavoring in coffee or black tea or seasoning when cooking dishes. If you don't have it, you can also choose ice sugar or white sugar.
Step1:Chop the ribs into small pieces. Put them in a container. Add 1 tbsp of soy sauce and 1 cooking wine + scallion and ginger slices and marinate for one night.
Step2:Drain the marinated spareribs. Sprinkle starch on the surface. Fry the spareribs twice as much as usual in the pan until they are colored.
Step3:Drain the fried spareribs.
Step4:Mix sugar + soy sauce + vinegar + cooking wine + a little water and mix well.
Step5:Leave a little oil in the pan. Stir fry the scallion and ginger. Put in the fried spareribs. Add in the sauce and stir well.
Step6:Add about 200ml of hot water. Cover the pot and simmer for about 15 minutes. Open the lid and heat to collect the juice. Put on the plate and sprinkle with white sesame seeds.
