Step1:Wash the ingredients. Peel the potatoes and cut into the hob. Cut the green pepper and eggplant into the hob. Chop the onion, ginger and garlic for use.

Cooking tips:Eggplant can be peeled or not. When frying eggplant, the oil temperature needs to be higher and a layer of dry starch should be wrapped. The fried eggplant will taste better and won't absorb too much oil. There are skills in making delicious dishes.
