This kind of my favorite vegetable, water bamboo, actually grows in the water and has one of the three famous dishes in the south of the Yangtze River. It's really unusual. It is said that before the Tang Dynasty, the seeds of water bamboo were planted as grain. Water bamboo grows in the water. It can be used as vegetable and medicine. It is rich in many trace elements and amino acids, so it tastes tender and delicious. Moreover, eating water bamboo can clear away heat and detoxify, prevent melanin production, make skin delicate, relieve the toxicity of drinking to liver, supplement nutrition, strengthen body, suitable for all ages. Cut the water bamboo into hobs. Stir fry it in hot oil. It tastes tender and oily. It's more balanced with pepper and sliced meat. But the water bamboo contains oxalic acid. If it is not treated, it will affect the absorption of calcium by the human body. It will also have a sour taste. So let's take a look at how to stir fry it to taste delicious and nutritious-
Step1:Wash the green and red peppers. Remove the stalks and cut into small pieces. Pat and chop the garlic.
Step2:Wash the water bamboo. Cut the hob. Just put the water bamboo on the chopping board. Cut it obliquely. Roll and rotate it. Then cut it obliquely again.
Step3:Add a little salt to the water. Heat to boiling. Blanch the cut water bamboo for a while. The oxalic acid in Zizania latifolia will be reduced after blanching, just like the oxalic acid in spinach in green leafy vegetables.
Step4:Heat the oil in a hot pot. Stir fry the garlic. Add in the green and red peppers and stir fry for a few times.
Step5:Pour in the meat. Stir fry until half cooked. Add in the water bamboo and salt. Stir quickly.
Step6:Add a small amount of raw soy sauce before leaving the pot. Stir well and serve. You can also add a little chicken powder to make it fresh. Don't put chicken powder too early. It will decompose harmful substances in case of heat.
