Eggplant is one of the most popular dishes in Northeast China. But the traditional eggplant is mostly greasy and heavy. Today, we have improved some steps to reduce some seasonings. It tastes delicious but not greasy.
Step1:Marinate eggplant for 20 minutes. Then squeeze out water for use.
Step2:Heat the oil pan and fry the eggplant until golden.
Step3:Take out the drained oil.
Step4:Adjust the seasoning juice ahead of time.
Step5:Pour the sauce and chopped onion and garlic into the pot and bring to a boil.
Step6:Put in Eggplant and stir well. Then pour in water starch and stir well again. Turn off the heat.
Step7:Put it on a plate and sprinkle with scallion.
Step8:Taste it. It's fragrant but not greasy.
