Summer is coming. Naturally I think of maodouzi. The most popular one is stir fried green pepper with Maodou rice. This fried chicken is a home cooked dish I've always wanted to make. Today, I finally tried. After buying the chicken nuggets, I cleaned them and removed as much blood as possible. I hope the meat is tender, smooth and juicy. Step1:Pour the oil into the pot (a little more than the usual stir fry). Heat the oil and put in the onion, ginger, garlic and two pieces of dried chilli (you can put more dried chilli if you like spicy food. The two pieces I put out basically have no spicy taste). Stir fry. After the flavor is out, put in the chicken pieces and some green and red peppers. Stir quickly.
Step2:When the chicken is slightly cooked, add in the Maodou rice (the Maodou rice has been fried with water in advance) and continue to stir.
Step3:Add 3 tablespoons of old soy sauce, 1 tablespoon of raw soy sauce, 1 teaspoon of salt, 1 teaspoon of oyster sauce, and half a teaspoon of sugar (sugar is added for freshness. If you are not used to it, you may not add it. The above seasoning is a approximate amount. It can be adjusted according to your own taste). Stir fry. Add water. The water level doesn't need to be lower than the chicken block.
Step4:Cover the pot. Let the chicken stew for a while. Add in the remaining green and red peppers. Heat to collect the juice.
Cooking tips:Because you don't blanch. Chicken nuggets must be cleaned. Remove the blood. More than a few times of water. Remove blood. Stir fry onion, ginger, garlic and dried chilli with a low heat. Otherwise, dried chilli will have a burning smell. Stir fry the chicken. Quickly lock the juice.
