I like to eat glutinous rice stuffed with pig intestines since I was a kid. But it's a Hakka snack. We can hardly buy it here. So considering the problems of hygiene and taste, I would like to do it myself. I can't imagine that I can manage such a difficult snack. But in the final analysis, I still want to thank my aunt for washing pig intestines very clean.
Step1:Prepare all materials. Soak glutinous rice and mushroom in water for 5 to 6 hours in advance. Drain. Chop mushrooms into fine grains. Cut sausages into granules. Boil peanuts in boiling water for about 5 minutes. Remove and set aside.
Step2:The amount of pork intestines is the amount of fat removed after cleaning. Pay attention that there should be no damage to the pork intestines. After cleaning the pig intestines, soak them in salt water for 1 ~ 2 hours before use, drain them and cut them into about 30cm long pieces.
Step3:Put a little oil in the pot. Stir fry mushrooms in the pot and stir fry until fragrant.
Step4:Stir fry the sausages and peanuts in turn.
Step5:Pour in the glutinous rice. Add all the seasonings - sand tea, oyster sauce, soy sauce, salt.
Step6:Turn off the fire and mix well.
Step7:Tie one end of the pig intestines with thread. Pour in the well mixed glutinous rice with a funnel. Do not overfill it. After filling, the other end is also tied with wire.
Step8:Boil the water over high heat. Add ginger and scallion. Remove the smell.
Step9:Put in the pig intestines filled with glutinous rice. The water is just better than all the pig intestines. Turn to a small fire at this time.
Step10:Stab the pig's intestines lightly with toothpicks. Let the air in them run out. Cover the pot. Cook over medium low heat for an hour.
Step11:Cook well and take out to cool. You can slice it to the table.
