A dish I loved when I was a kid.
Step1:Slice potatoes. Thin and even.
Step2:Peel the eggplant. Leave some skin properly. It's not easy to break when frying.
Step3:Hot oil in the pot. Add potato chips when it's seven minutes hot. Fry until it's discolored. Fry again. It's Crispy on the outside.
Step4:Heat the oil in the pot. When it's seven minutes hot, fry the eggplant and remove the discoloration.
Step5:Fry eggplant and potatoes for later use. A little oil in the pot. Add onion, ginger and garlic. (I also put meat today). Stir fry until fragrant. Add green pepper. Stir for a few times. Then add soy sauce, pepper powder (or thirteen spices). Add water lake powder. Stir into paste. Add potatoes and eggplant. Stir.
