I don't want to waste the rest of the Pitaya skin. It's mixed with mung bean sprouts. It's surprisingly delicious.
Step1:Wash the bean sprouts and remove the tail (I'm lazy but I haven't got rid of them). Use a spoon to scrape off the Pitaya peel, cut it into shreds and marinate it.
Step2:Let the bean sprouts boil in the water for three minutes to remove the fishines
Step3:Drain the boiled bean sprouts and let them coo
Step4:Mix it with the Pitaya peel. Season it with a little salt, soy sauce, vinegar and sesame. It's appetizing
Cooking tips:The bean sprouts must be blanched and cooked. Vinegar can be added to taste and keep the nutrition intact. There are skills in making delicious dishes.
