Step1:When buying fish, ask the master to cut the fish from the back. Wash and drain at home. Marinate with salt, pepper and rice wine for 30 minutes.
Step2:Preheat the oil in the pot. Saute the ginger slices and put the fish in the pot. Fry over medium low heat until golden. Turn the other side over and fry until golden. Sprinkle the onion in the pan.
Step3:Pour in the oil and stir fry the pre ground ginger paste. Thicken with oyster sauce, soy sauce and cornflour. Pour over the fried fish.
