Qifeng cake is the simplest and the most likely to fail. This is my summary of countless experiments.
Step1:First mix the liquid material (except protein) wel
Step2:Sift the flour and starch and mix them in the yolk past
Step3:The protein is added to the sugar three times to kill. Beat it into a small straight hook like this
Step4:First put one-third of the egg white into the egg yolk paste and mix it. Then put the egg white paste into the remaining egg white and mix. Shake gently after molding
Step5:In the oven. 170 degrees for 50 minutes. You can see that the cake is climbing higher than the cake mold.
Step6:Shake it slightly after it's out of the furnace. Then turn it upside down and cool it before demoulding.
Step7:The shape after demoulding. The bottom is also beautiful.
Cooking tips:The sugar must be divided into three times when beating the protein. Otherwise, the hair will not rise very much, and the shorter the mixing time, the better. Another point is to make sure that there is no oil or water in the mold, because Qi wind has to climb along the inner wall. There are skills in making delicious dishes.
