Step1:Slice potatoes. Cut dried pepper, green and red pepper, and scallion. Slice ginger and garlic for later use.
Step2:Chop the whole chicken (or chicken leg) into small pieces. Wash off the blood. Drain and put it in the bowl for later use.
Step3:Put the oil in the pot. When the oil is hot, put in the pepper and the big stuff. When it turns black, remove it.
Step4:At this time, the oil temperature in the pot is very high. Put in the chicken pieces and stir fry them.
Step5:When the chicken is discolored, add the green onion, ginger and dried pepper. Stir fry for 30 seconds. Add cooking wine and vinegar along the side of the pot. Continue to stir fry for two minutes.
