Step1:When you buy it in the market, let the master kill it for you. After you take it back, clean it carefully. First, wash it in the water basin. Then wash it with running water. Be sure to wash it clean. Otherwise, there will be sand when you eat it.
Step2:Cut the garlic into minced garlic. Cut the Douchi into minced ones. Cut the sharp pepper into small circles. If you don't like spicy food, you don't need pepper.
Step3:Stir fry garlic and pepper in hot oil.
Step4:Pour in the razor clam and stir fry it for a few times. Then add cooking wine to the Luo pot. The purpose of adding cooking wine is to remove fishiness.
Step5:Stir fry constantly. You can see a lot of water in a minute or two. Now you can put salt.
Step6:Cover the pot and simmer for one or two minutes. Then remove the lid and add in the soy sauce. Then you can come out of the pot and put it on the plate
Cooking tips:Don't fry for too long. The razor will be old after a long time. There are skills in making delicious dishes.
