Step1:Slice potatoes and carrots. Dice shallots into scallion and green leaves. Shred ginger. Dice garlic. Heat up the pot and add soybean oil. Heat up the pot. Stir in pepper and stir fry. Stir in potato slices and salt for 1 minute. Stir in scallion, ginger and garlic for 2 minutes. Stir in carrots for 2 minutes. Pour in soy sauce and turn off the heat. Sprinkle with Scallion leaves to get out of the pot.
