Step4:All kinds of fillings are also kneaded into 25g / ball. I used the ready-made red wine Cranberry filling, pineapple filling, lotus filling and bean paste filling. This can be replaced according to your own preference.
Step5:Take an ice sheet and press it flat. Put the stuffing on.
Step6:Use tiger's mouth to push the ice skin up slowly. Then squeeze it tightly. Dip some baking powder on your hand. Rub it round and smooth.
Step7:Then sprinkle a layer of cooked powder in the mold. Pull some ice dough of other colors and put it in the center of the flower piece. Put the wrapped moon cake smooth face towards the flower piece. Close the mouth down. Press down the handle with force. Take it out slowly.

Cooking tips:I don't like to use pigment. So I added natural powder. If you like the color lighter, you can reduce the amount of pigment properly. But if you use pigment, it should be very transparent and beautiful. Then when I knead the dough with these kinds of flour, I found that the purple dough made of purple potato flour is more sticky than other dough. I don't know whether it's my flour problem or what's the cause. If you do it, you can reduce the water volume of the purple dough properly. Try it ~ this recipe can make 20 50g ice skin mooncakes.
