When I was a child, I used to eat steamed eggs made by my grandma. The surface of steamed eggs was full of honeycomb. It tasted like soy sauce. I like to mix them with rice and mash them. I can eat several bowls. A few years later, I lived with my parents. I ate my dad's steamed egg. But his version was advanced. There was no honeycomb. I was a little reluctant when I took my first bite. His secret is to add warm water, skim off the froth and steam with plastic wrap. Later, I lived alone and began to make steamed eggs by myself. On the basis of the second generation, I added a little more variety. The warm water was changed into stew, and the side dishes were added. It was a bit like the unorthodox tea bowl steaming. Step1:Cut asparagus into sections. Use a knife to cut cross flowers for mushrooms. Use shrimp and crab sticks for standby.
Step2:Put mushrooms, asparagus and prawns / crabmeat in a pot and blanch them in boiling water. Add soy sauce and a toss of cooking wine into the soup. The stew is finished.
Step3:After the egg is beaten, add 1 teaspoons of salt. Stir evenly. Filter out the foam on the surface.
Step4:Slowly pour the warm stew with the proportion of 1-1 to the egg liquid into the egg liquid to permeate. Seal the egg bowl with the fresh-keeping film, put it into the cold water pot, and then open fire to steam.
Step5:Turn down the heat immediately after the water in the steamer boils. Keep the water in a small boiling state. Steam for 10 minutes and then open the lid. (try to see if the eggs are fully cooked. Insert a toothpick to see if the egg liquid sticks to it when you pull it out.)
Step6:Spread the stewed shrimps, asparagus and mushrooms on the eggs, and add some remaining stew juice. You can steam for another 12 minutes if you are particular about it.
