I know from Chongqing and Chengdu friends. I can put my favorite food and materials. So I add some ingredients in my home. I bought them from pig ear supermarket. I have cut them for vacuum refrigeration. I don't have to deal with it by myself.
Step1:Ingredients preparation - white broccoli, dried agaric, carrot, lotus root, instant pig ear. The instant pig ear is taken out from the freezer in advance for natural thawing or water washing thawing.
Step2:Spicy pot material, peanut oil, white sesame.
Step3:Soak the dried fungus in fresh hot water. Then wash it several times. Filter the water for standby.
Step4:Remove the skin and cut the long pieces of carrots. Cut the long strips instead. Peel and slice lotus root.
Step5:Cut the bottom of the broccoli. Take the leaves and clean them. Cut into thin strips.
Step6:The scallion white section is half cut.
Step7:Put 20 grams of white sesame into a hot pot. Stir fry over low heat until discolored. Put in a bowl for later use.
Step8:Boil half a pot of water. Open the water and put in lotus root slices and carrot strips. Cook until soft. Scoop up and put on the plate.
Step9:The fungus is also cooked and put on the plate.
Step10:Blanch the shredded broccoli a little and discolor it.
Step11:Control the water content in the pot. Pour in 3 tablespoons peanut oil. Stir fry the onion. Add 20 grams of spicy ingredients in the pot and continue to stir fry until the color turns red.
Step12:Pour in the thawed pig ears. Stir fry for a few minutes until the red oil is even.
Step13:Add carrot sticks, lotus root slices and agaric. Stir for a while.
Step14:Add in the shredded broccoli and stir fry slightly. Finally, add in the white sesame and mix well. Let's get out of the pot.
Cooking tips:1. All the ingredients are the weight before treatment. Carrot and lotus root should be as thin as possible. They can be boiled together. When they are soft, you can taste them thoroughly. Then you can fish them. 2. White broccoli doesn't need to be blanched for too long. 3. Vegetables can be added according to personal preferences. 4. Spicy pot material is enough. No more salt. If you are afraid of spicy, reduce the spicy pot ingredients. Add salt according to your taste. There are skills in making delicious dishes.
