Step1:First, soak the fresh beef socket bones in cold water for a day. Change the water several times. Soak the blood in water (j-n).
Step2:Blanch the beef socket bone soaked in hot water.
Step3:Prepare a Chennai.
Step4:Put enough water in the autoclave. Add the Chennai, ginger, white pepper and salt. After 20 minutes of stewing in a high-pressure cooker, reduce the heat and press for about half an hour.
Step5:Put the stewed beef bones on a plate. Dip them in. According to personal taste, use raw soy sauce, oil chilli, vinegar, mashed garlic, a little of the original soup.
