Mei (California Mei). Originated in southwest France. It looks like apricot Mei. It's sweet and fragrant. It tastes smooth. Ximei is rich in vitamin A and cellulose. It also contains iron, potassium and other minerals, but it does not contain fat and cholesterol. Therefore, it is known as miracle fruit and functional fruit.
Step1:Wash the prunes, remove the core and cut them into pieces. Put them into a bowl. Sprinkle with sugar and mix well. Marinate for 1-2 hours.
Step2:Pour the pickled prunes into the stainless steel pot. Add in the sugar and lemon juice. Pour in half a bowl of water.
Step3:Cook over high heat until the pot is boiling. Turn the heat down. Cook slowly until the jam turns red.
Step4:The surface of the jam is frothy. Stir with a spatula and simmer over low heat until the jam is thick. Until most of the berries disappear.
Step5:The sealed bottles of jam should be steamed and sterilized in advance. The cooked jam is bottled while it's hot. Cool naturally and refrigerate.
Cooking tips:1. Don't use iron pot. 2. The fruit doesn't need to be boiled completely. Leave some flesh. The taste is better. There are skills in making delicious dishes.
