There is a chicken rice shop in Hainan near the company. They eat it at noon almost every week, especially the chicken rice with green curry. The taste is unique. At the end of 2016, I went to Thailand for a self driving trip. I specially tried the green curry chicken of several local restaurants. I always felt that no matter in China or Thailand, the taste could be improved. So, I decided to try to cook this green curry by myself. After two failed attempts, I finally succeeded in creating this Thai Style Chicken Curry with shrimp.
Step1:Prepare and wash all necessary ingredients.
Step2:Get ready to bone and cut the chicken leg. Try to keep as much meat as possible.
Step3:Boneless chicken leg. Shelled shrimp.
Step4:Chicken leg meat can be mixed with a small amount of starch, cooking wine and salt and marinated for a while. Fish sauce can be added if necessary.
Step5:Slice the side dish during marinating the drumstick.
Step6:In the oil pan, stir in ginger slices and stir fry. Add in a tablespoon of green curry sauce (I choose real Thai). Then pour in coconut milk (I didn't buy Coconut Milk specially. So pour in coconut milk
Step7:Mix the curry sauce and coconut milk in the hot pot, and then put in the marinated chicken leg meat. Cover the pot for a while.
Step8:Cook the chicken leg meat until it's half cooked, then put in eggplant. Stir fry until it's half cooked.
Step9:Then add some side dishes, such as Chiwei shrimp, shengnv fruit, sweet pepper, zucchini and lemon.
Step10:Stir fry for a while. Collect the juice and prepare to leave the pot.
Step11:Out of the pot. If you have citronella or mint leaves at home, you can break them and sprinkle them on them.

Cooking tips:1. Determine the amount of green curry according to the taste of spicy food. 2. Lemon must not be put into the pot too early. Otherwise, the soup will be bitter. 3. This dish tastes sweet and delicious, so you can add more coconut milk. There are skills in making delicious dishes.
