Step1:Prepare materials. I am lazy to use Mapo Tofu seasoning. If not, I can mix a simple sauce with Pixian Douban, soy sauce, sugar, salt and chili powde
Step2:Heat the pot and pour in the cooking oil. Then turn off the heat. Add ginger, garlic and orange peel to make it fragrant. (turn off the fire because I'm afraid to paste the pot. You can also turn it down.
Step3:Keep the fire off. Add Mapo Tofu seasoning. Stir fry with residual heat.
Step4:Add cooking wine and hot water, then turn on the heat. Boil.
Step5:Put in the cut pig blood. You can add a little boiling water to make the water roughly submerge the pig blood. Boil in high heat. Keep boiling for 2 minutes, then turn to low heat. Cook until the pig blood is completely discolored. The water surface drops obviously. Pour in the prepared water starch and collect the juice over high heat. Taste and adjust the saltiness.
Step6:Before leaving the pot, pour in some pepper oil. After packing, sprinkle black pepper and scallion on the surface. It's done.
