Step1:Make Sugar Lemon first - wash 2 lemons with salt. Then rub the rind into lemon chips. Be careful not to rub the white part, so as to avoid suffering.
Step2:Add 5g of sugar into the lemon crumbs, mix well to make a Sugar Lemon for later use.
Step3:Cut 85g butter into small pieces and soften them at room temperature in advance. Apply proper amount of butter to the inner wall of the cake mould and roll a thin layer of low gluten flour.
Step4:Mix 85g of sugar and 1g of salt evenly. Add the butter softened at room temperature (the butter melts at room temperature until it can be slightly punctured by hand
Step5:Mix well with a scraper to avoid splashing out the sugar.
Step6:Use an electric beater to beat the butter until the color becomes lighter and the volume doubles. (when playing yellow oil, the temperature is too low. You can sit in 40 ℃ warm water. If the temperature is too high, oil-water separation is easy.
Step7:Add 85g room temperature egg liquid which is stirred evenly in three times. Each time you add egg liquid, you must beat evenly. Then you can continue to add egg liquid and beat evenly until all the egg liquid is added.
Step8:Then add 20g lemon juice in two times. After each time adding lemon juice, it must be thoroughly and evenly mixed before adding lemon juice again.
Step9:Then add 100g of sifted low gluten flour. Sifting can make flour mix with more air. The baked cake will be fluffy.
Step10:Use the scraper to cut and mix until there is no flour particles. Do not circle or over mix to avoid the raw gluten affecting the taste.
Step11:Then add sugar lemon. Stir well.
Step12:Prepare the decoration bag. Fill the mixed batter into the decoration bag and fasten it. Cut a centimeter in the front section. Then fill the batter into the mold.
Step13:After filling into the mold, shake it on the table twice together with the mold. Then use a scraper to wipe the batter into a concave shape with high sides.
Step14:Put it into the oven which has been preheated 180 degrees in advance. Put it in the middle and lower layers of the oven and bake for 4045 minutes. (temperature and time are for reference only. Adjust according to your own oven
Step15:When baking for about 2025 minutes, take out and use a knife to quickly cut a hole on the surface, so as to make a beautiful crack.
