Step3:Prepare the juice and sesame oil. Thanks a lot more than usual. Half a scoop. Rice wine soy sauce sugar = 4-2-1. Soy sauce is half raw and half old. Bingtang can be made with ordinary Bingtang. There is just a little yellow Bingtang left in my house. So this time, we chose the Yellow Bingtang.
Step4:Heat up the pot. Pour in the sesame oil. Heat up slightly. Put the ginger slices in it. Stir fry until the ginger fragrance comes out. The edge is slightly burnt yellow. Then add garlic, pepper and scallion in turn. Stir fry until fragrant.
Step5:Turn the fire and pour the chicken into it. Stir fry the chicken until it is dry. The skin is discolored and yellowish. Add rice wine, soy sauce and sugar. Stir fry and color.
Step6:Turn the chicken into a casserole. Heat it up and turn it to a low heat. Wait until it's almost dry. Add in the basil leaves. Stir for a few times to get out of the casserole.
Cooking tips:Rice wine - soy sauce - rock candy = 4-2-1. The chicken made from this proportion is quite authentic and delicious. Three cups of chicken must not add water. Otherwise, it will not taste right. It uses rice wine, soy sauce and the water content of chicken itself to support this dish. If you're afraid of spicy food, you don't need to add small peppers. Hot pot likes spicy food. So my meat dishes usually add some peppers. Don't like the whole chicken. You can choose chicken leg meat with skin. It's suggested that you don't use chicken breast meat. It's a little skin. It's delicious only when the chicken oil is naturally produced. Basil is the finishing touch. If not, add some parsley. But the taste is different.
