Step1:Clean and cut the black fish. Soak the fungus and wolfberry in water. Soak the tender tofu in hot salt water.
Step2:Saute ginger and garlic with oil. Pour in the cut fish and stir until it changes color.
Step3:When the fish changes color, pour in boiling water (I'll use a casserole on the nearby stove to boil half of the water. After the fish changes color, pour in half of the boiling water in the casserole). Put in the knotted shallots. Heat to boil.
Step4:After boiling, quickly pour it back into the casserole (half of the boiling water is left in the casserole). Continue to heat for more than 15 minutes.
Step5:When the fish soup turns milky white, add agaric and wolfberry. Add some salt and black pepper. Heat for 2 minutes. Add in tender tofu.
Step6:Cook for another 5 minutes. Sprinkle with coriander. Serve.
Cooking tips:Add boiling water and heat for more than 15 minutes. The soup will become milk white (some lard can be added during the period. The effect will be better). There are skills in making delicious dishes.
