Step1:Wash and chop amaranth.
Step2:Add water to the soup pot. Add chopped amaranth. Add a spoonful of white vinegar (keep the color bright). Stir until the pot is boiling. Filter out the amaranth juice with the filter screen for standby.
Step3:Wash the lotus root, beat off the thin skin, cut it into thin slices, wash it with water several times and filter off the starch.
Step4:Boil the water in the soup pot. Blanch the lotus root slices for 3 minutes. Take out the cold water to cool down.
Step5:Put the lotus root slices into the amaranth juice. Add some sugar and vinegar according to the taste. Let cool and refrigerate.
