Today, I want to introduce this delicious food. It comes from the wonderful memories of my college days. After some research and try, I made the Mexican crispy dumpling which is closest to the taste of American university campus. Rich goat cheese with sweet corn, sweet potato and sweet pepper, plus homemade crispy dumpling skin. And I make it in the oven. It's healthier than the usual fried crispy Mexican dumplings.
Step1:Let's make the skin of Mexican crispy dumplings first. In a large bowl, mix the medium gluten flour and salt. Mix well. Add the solid butter cut into small cubes. Use a pastry cutter or two butter knives and put them together. Press the flour and butter to form a thick sand shape. It's suggested that friends who like to make western food should have a cake cutter. It's really easy to use in similar cooking steps.
Step2:In another small bowl, add eggs, ice water and white vinegar. Mix well and pour into flour.
Step3:When mixing by hand, you can feel the dough rough and fluffy. The egg mixture turns the dough golden.
Step4:Don't over knead the flour. Just mix the flour and the egg mixture evenly and shape it. Then cover it with plastic wrap and refrigerate it for at least 1 hour.
Step5:Make stuffing when dough is refrigerated. Prepare the vegetables you need. Corn, red pepper and sweet potato.
Step6:Put butter and olive oil in a pan. Heat over medium heat. Add in sweet potatoes and fry until just colored. Sweet potato can bring unique sweet taste to Mexican crispy dumplings.
Step7:Add in red pepper and corn. Stir fry for about 56 minutes until the ingredients are soft. Turn off the heat. Stir in chopped shallot. Season with a little salt and pepper. Don't put too much salt. Goat cheese and cream cheese are both salty. Then let it cool down.
Step8:Take another large bowl. Add goat cheese and cream cheese.
Step9:Add chopped parsley.
Step10:Add the cooled mixed vegetables. Stir well. Taste again. Season with salt and pepper.
Step11:Crispy dumpling dough is refrigerated. The filling is ready. Now you can make crispy dumplings. Preheat the oven to 200 ℃. Divide the dough into 12 equal parts. On the chopping board sprinkled with a little flour, press each small dough into a round lump and roll it into a round dumpling skin with a diameter of about 10cm.
Step12:Spoon 23 tablespoons of stuffing into the middle of the dumpling skin.
Step13:Fold the dumpling skin in half and wrap the stuffing.
Step14:Close the skin tightly and press out the beautiful folds of the crispy Mexican dumplings.
Step15:Don't stick paper on the baking pad. Pile up the wrapped Mexican crispy dumplings.
