The weather is hot and everyone wants to eat cold dishes. My daughter said yesterday that she would like to eat cold skin. Step1:Mix the flour with warm water. Add the water slowly. Don't increase it at a time, for fear of too much water and too soft. The dough should be rubbed all the time like a washboard. Rub it left. Rub it right. Rub it up. Rub it down. Rub it all the way. It's best to rub it for 20 minutes.
Step2:Let it stand for half an hour after rubbing. It's time to start to wash the dough. The dough is just like the dough just rubbed. Wash it with water like washing clothes. Pour the washed white water into a large lid basin. Until there is no white water slurry, you can stop washing. There must be not much white water to wash. Just follow the Yellow force. Be patient and don't rush.
Step3:After washing, let the washed pulp stand still for more than six hours. Steam the washed noodles vigorously in a pot for half an hour. Use it to stir fry. Cold mix is OK.
Step4:When it's time, pour out the water in the basin as clean as possible. Stir the batter in the bottom with a spoon. Then drain the water from the steamer and open fire. After the water is boiled, pour out the batter in a cold skin pan. The batter should be as thin as possible. The thick point should be liked by everyone. The thin batter should be at least five minutes. The thick one should be at least eight minutes. Make sure the cold skin is steamed. . when asked to take it out and let it cool for a while, tear off the cold skin directly.. put it in a clean container. Repeat the steaming of all the batters.
