Step1:1. Prepare all the ingredients - mustard seed oil, tender tofu (400g), beef (100g), Pixian bean paste (2 spoons), cooking wine (2 spoons), white pepper (half a spoonful), chili powder (1 spoonful), Chinese prickly ash (10g), onion, ginger and garlic (right amount), salt, chicken essence, sugar (a little), raw soy sauce (1 spoonful), water lake powder (a dish), onion (a little).
Step2:2. Cut the tender tofu into 2cm cubes. Soak it in the boiling water (sprinkle a little salt in the water) and soak it for standby.
Step3:3. Cut the beef into small pieces first, then chop it into meat filling. Add cooking wine and white pepper and mix well.
Step4:4. Cut the ginger, onion, garlic and scallion.
Step5:5. Make the water lake powder ready for use.
Step6:6. In the frying pan, pour in the little mustard seed oil (as wide as possible).
Step7:7. When the oil is 40% hot, pour in the beef stuffing.
Step8:8. Stir fry the beef stuffing until it turns white and discolored. Serve.
Step9:9. Put the bottom oil in the pan into Pixian bean paste and chili powder. Stir fry the red oil in small heat.
Step10:10. Pour in the fried beef stuffing. Add ginger, onion and garlic and continue to stir fry.
Step11:11. Stir fry with soy sauce.
Step12:12. Add some boiling water and bring to a boil.
Step13:13. Pour in dried tofu.
Step14:14. Shake the pan slightly to make the tofu completely immersed in the soup and add sugar. Stew it over a low heat (do not use the spatula to turn it over during this period, so as not to break the tofu).
Step15:15. Grind the Chinese prickly ash into a pot with a grinding bottle. Continue to simmer.
Step16:16. Add water starch (remember that water starch cannot be added in one time).
Step17:17. Add water starch again (Tips - choose to add water starch to the rolled water flower).
Step18:18. Turn on the fire and collect the thick soup.
