It's a hot summer day. I don't have an appetite. But my father's braised pork ribs are so appetizing.
Step1:Buy ingredients (dried meat is the best
Step2:Blanch the ribs. Put one or two drops of vinegar, two or three drops of cooking wine and two pieces of ginger.
Step3:Wait until the foam is ready. Remove the ribs. Wash and drain. Place aside.
Step4:Oil in the pan. Add ginger. Sprinkle a little salt to prevent the pan from sticking.
Step5:Put the ribs in the pot. Start frying.
Step6:Fry until golden. Sprinkle a little sugar, salt and soy sauce. Stir continuously.
Step7:Stir fry almost. Add some old soy sauce (less than raw soy sauce) and garlic and stir fry for a few times. Add some water. Turn to low heat and simmer for 30 minutes.
Step8:Finally, pour a little cooking wine into the pot. Start the pot and collect the juice. Perfect.

Cooking tips:Salt in the oil can prevent the pot from sticking. Put a proper amount of sugar to improve the flavor. Put cooking wine in order to cover the fishy smell again. There are skills in making delicious dishes.
