My children like my ribs best. Good things to share. I didn't take a picture this time. I'll make it up next time.
Step1:Drain the ribs in cold water. Boil for 5 minutes. Remove. If there is too much foam sticking to the ribs, wash them with hot water. Slice ginger for later use.
Step2:Put oil and rock sugar / sugar in the pot. Simmer slowly until the sugar melts. Turn it into reddish brown. Stir fry the lower ribs evenly. Pour in the old soy sauce, some cooking wine, some salt and chicken essence. Stir evenly. Put in the star anise and ginger slices. You can also put some dry peppers if you like spicy food. Pour in boiling water. You can put more boiling water. The longer the time is stuffy, the worse it will be. Close the lid. Medium heat. Keep it for 50 minutes. If the water is about to dry in the middle, add boiling water.
Step3:When the soup is almost collected, add water starch (adding water starch will not only make the dishes look shiny, but most importantly, it will make the soup hang on each sparerib and make the spareribs taste better.) . sprinkle a little sesame seeds. Then mix them evenly. Everyone collect juice. It's better to watch the process of collecting juice. Don't paste them.
Step4:You can't take too much juice. You have to leave some soup. Otherwise, the ribs will be very dry. It's not delicious. Put away the juice. Take out the spareribs. Put them on a plate. Take out the ginger slices and octagons and throw them away. Pour the rest of the soup on the spareribs. That's OK.
