Step2:Clean the chicken feet. Remove the nails. Cut them for use. Ginger slices and cooking wine. Add ginger slices and 4 porcelain spoons of cooking wine to the cleaned chicken feet. Marinate for half an hour.
Step3:Heat the frying pan and bake it in the marinated chicken feet (without oil). Add boiling water to the chicken feet when they are discolored (the water just submerges the chicken feet).
Step4:Add soy sauce, white sugar, cooking wine, ginger slices and soybean paste in turn (add chili if you have spicy food), mix well. Turn to medium low heat, cover the pot and simmer for 1520 minutes.
Step5:Check that the soup is significantly reduced. Add oyster sauce to collect the soup (add oyster sauce to adjust the saltiness according to your taste) and then dish out. This dish doesn't need to be seasoned with oil or salt.
