Nuomi lotus root is one of the special dishes in the south of the Yangtze River. It is usually made with osmanthus, ice sugar and red dates. It can also be cooked with brown sugar. The method of nuomi lotus root is very simple. But the process of loading rice needs some patience. It takes more than 2 hours to boil the lotus root to make it soft and waxy.
Step1:Wash glutinous rice and soak for 1 hour in advanc
Step2:Lotus root. 2 sections and 3 sections are OK. Wash and peel according to your own need
Step3:Cut the head 1.5cm2cm to expose the lotus root hole. It's not easy to plug the glutinous rice into the hole. You need to use chopsticks to poke the rice into the hole. Otherwise, the middle of the hole will not be filled with glutinous rice. But don't fill it too full. When the glutinous rice is boiled, it will expand
Step4:After the glutinous rice is loaded, close the cut part with toothpick to prevent rice leakage and put it into the pot. Pour in water
Step5:Put in 50g brown sugar (adjust according to the actual sweetness). Put in a few red dates and bring them to a boil. Turn them to a low heat and simmer slowly. If there is no pressure cooker, it will take more than 2 hours to simmer slowly
Cooking tips:Don't fill the lotus root hole with rice too hard, because there are skills in expanding and cooking after the rice is cooked.
