Step1:Homemade chili sauce - Take 500g red pepper and cut into small pieces. Add 10g garlic puree, 10g scallion and 50g salt, 30g monosodium glutamate and 10g cooked sesame seeds. Marinate for one day. Take out and stir fry with oil.
Step2:Remove the leaves from the cabbage and leave them for the stem (leaves can be used for other dishes or put together) and wash them.
Step3:Put the cabbage in the boiling water pot and fly. Take it out and chill it with ice water. Change the knife to a length of 6cm
Step4:Mix with homemade chili sauce, steamed fish and soy sauce, mashed garlic and scallion oil and pour them on the prepared dish of cabbage.
Cooking tips:Try not to blanch cabbage in an iron pot. It will turn black due to oxidation. You can use a casserole or stainless steel bucket. There are skills in making delicious dishes.
