Step3:Put the lid on and let it ferment in a warm place. Because I want to experiment with the old method this time. I'm not in a hurry. So I knead the dough in the evening. I fermented it all night. The next morning I found that the dough had been ready.
Step4:The dough is fermented to twice its size.
Step5:Poke a hole. The dough will not spring back.
Step6:There are honeycombs under the pulled dough. If the above three conditions are met, the dough is ready. It can be seen that the humidity of my dough is relatively high. It doesn't matter. It's good to add some flour at any time when kneading the dough at the back, because the dough with good hair is not afraid to knead the flour.
Step7:Put a small pinch of soda on the kneading pad. Spread the soda by hand. Start kneading the dough. Knead more. Let the soda fully knead into the dough.
Step8:Cover and wake up for 10 minutes. Relax the dough.
Step9:After 10 minutes, roll the dough round. Then roll it into a 5mm thick round cake.
Step10:Roll the pancakes from top to bottom. Roll them tightly. Then I cut the dosage into even size. Because the shape of the dosage at both ends is not good, I knead the dough at both ends into a round dosage.
Step11:Add cold water to the steamer in advance. Put the wet drawer cloth on the grate or brush a layer of peanut oil on the grate. Put the dough in. There should be a certain gap between the dough. Cover and wake up for 20 minutes.
Step12:20 minutes later. Boil the fire for 5 minutes. Let the water boil. Boil the water in the middle and steamed for 10 minutes. Time to go. Turn off the fire and braise for 5 minutes.
Step13:Five minutes later. Take out the steamed bread quickly. This step should be fast. Can't wait. The soft and delicious old steamed bread is ready.
