My daughter's favorite afternoon tea. At 4:00 p.m. on weekends, I woke up and had a nap. I wanted to eat delicious food. Just in time, I caught up with my dispatch pot. I ate a quarter at a time (the little princess was only three and a half years old). Even her mother, who claimed to lose weight, ate a quarter. There is no pie plate at home. I made it with a 6-inch movable bottom cake mold. It's not good-looking, but it's delicious. Try it if you are interested. There will be surprises.
Step1:Soften butter and cream cheese at room temperature. Fingers can be easily pressed flat.
Step2:Break up the butter with an egg beater. Put in sugar. Beat until white and feathery.
Step3:Add an egg yolk. Continue beating with the beater until even.
Step4:Sift in low gluten flour, mix evenly, knead into dough by hand, refrigerate and relax for half an hour.
Step5:The process of relaxing the dough can be used to make filling. Break the cream cheese with an eggbeater. Add sugar and continue beating until it is even.
Step6:Add the whole egg mixture twice or three times. Mix well each time and then add the remaining egg mixture.
Step7:Add cream. Mix well. Add 3G of low gluten flour and mix well. If you like, you can add a few drops of vanilla essence. Or add some lemon juice to enhance the taste.
Step8:Roll the dough into a dough about 5mm thick.
Step9:Put it into a 6-inch cake mold. Press it by hand to finish it. Make some holes on the pie with a fork to prevent the pie from bulging during baking.
Step10:Put all the stuffing into the pie. Don't fill it up. Leave some space. 6 or 7 minutes full. When baking, the stuffing will rise even higher.
Step11:Preheat the oven at 170 degrees. Put the mold in the middle layer. About 30-35 minutes. According to your oven's temper. Bake until the pie is burnt yellow. The stuffing is slightly colored (the color is a little heavy this time).
Step12:Let it dry for a while. Shake the outer wall of the mold to loosen the skin. The filling will collapse a little. There is a little temperature (I like the warm one). It's better to pour a layer of yogurt on it. Or choose coconut. Mango and blood orange are selected for this fruit.
Step13:Finally, decorate your favorite fruit. The fruit pie is successful. Start to enjoy it.

Cooking tips:If you don't have whipped cream, you can add 40g yoghurt to the filling. But the sugar in the filling will be reduced by 5g. Because yoghurt is also sweet. There is not much sugar in this pie. You don't need to reduce it. If the sweet taste is heavier, you can add more sugar. There are skills in making delicious dishes.
