It's another year to eat Chinese toon. Everyone has a different way of doing it. This fried fish is the way of my hometown. Don't spray if you don't like it. -
Step1:Rinse Chinese toon. Remove the hard stem. Soak it in salt water for about half an hour. Dice the bacon. Ignore those who don't like meat. Add flour and wheat starch into the bowl.
Step2:Add the egg, pepper powder, salt, cooking oil and water into the flour to make the batter?
Step3:Add the diced bacon and mix well.
Step4:It's OK to adjust the batter to this level. It can't be too thick. It's not crisp when fried. Just pick up the chopsticks and let them flow down evenly.
Step5:Batter for later use.
Step6:Heat the oil to about 150 ℃.
Step7:Control the water and add the Toon to the batter. Mix well. Let the Toon cover the batter evenly.
Step8:Deep fry until both sides are golden. It's not easy to set the shape when the oil temperature is too low. If it's too high, it will paste away. So control the oil temperature. Drop a few drops of batter into the pot and it will float up immediately.
Step9:It's crispy and dross just out of the pot. Or it's good to bake some pancakes and roll them up.
Cooking tips:This dish is relatively simple. It's mainly the thin and thick batter. And the frying oil temperature. There are skills in making delicious dishes.
