Step9:Add the egg liquid in three times, and beat evenly every time.

Step11:Sift in the flour with low gluten. Mix it evenly with a scraper. Do not mix it many times.
Step12:Smooth it with your hands. Divide it into small pieces. I divided it into 13 pieces.
Step13:Each small portion is kneaded into a small ball. The dough exhausts air.
Step14:Press the pastry ball slightly. Put it in the center of your left hand.
Step15:Hold the dough in your right hand and press it into the pastry of your left hand. At the same time, gently apply both hands. Let the pastry cover 2 / 3 of the dough.
Step16:It's about to this extent. You can only see the pastry after putting it right.
Step17:After all is done, use a knife to make a grid on the pastry. It must be light. Don't cut it. Cover with plastic wrap. Put it in the oven and ferment for 40 minutes. Put a pot of 45 ℃ hot water under it.
Step18:After fermentation, brush with egg liquid (about 50g for an egg, remove 35g of used egg, and 15g for the surface). Bake for 1520 minutes in the middle layer of 180 degree oven. Adjust the temperature and time according to the coloring condition.
Step19:Keep it cool and sealed with a fresh bag.
Cooking tips:1. If you think it's troublesome to make soup, you can get rid of that step. Other materials do not need to be changed. 2. You don't need to rub out the glove film to make a pineapple bag. 3. Be careful when covering the pastry. Try not to crack the pastry, or it will crack completely.
