The bean paste bought outside is too delicate. I really can't love it. I have to do it myself.
Step1:Soak the red beans one night in advance. At least one night in advance or it will not be easy to boil and spoil. If you want to make more bean paste and put it in the refrigerator, you will soak more beans. Otherwise, you will soak less. Pour the soaked red beans into the rice cooker. Enlarge the taste of six or seven seeded red dates. Don't put too many red dates.. More will cover the red bean flavor.)
Step2:I like the fragrance of osmanthus, but it will affect the taste of bean paste if I put osmanthus directly into it. So I choose to soak osmanthus in hot water until the water is cash yellow and the fragrance is fragrant. I've been soaking for about half an hour.
Step3:Use the strainer to filter the osmanthus water into the rice cooker where the red beans are put. Insert your index finger in it. The water level is about a little more than the first knuckle. Press the cooking button on the cover. Osmanthus is really fragrant.
Step4:When the rice cooker jumps over, open the lid and have a look. Take out a red bean and crush it easily by hand. According to my water level, it should be just the time to dry the pot without soup. If you put too much water, the beans have been cooked soft and rotten, and there is red bean soup in the pot, then carefully pour out the excess soup.
Step5:Because I hate the bean paste which is too delicate and can't be lumped up like mud, I choose to use this kind of chopper to grind the cooked beans. This machine is the one for mincing garlic. It can not only mince beans, but also retain some particles. It just meets my requirements. If you like the delicate taste, you can use the wall breaking machine directly. Friends who don't have a blender or a wall breaker can also put the cooked red beans into a fresh-keeping bag and roll them with a rolling pin.
Step6:No matter what method you use, it's OK to make beans like this.
Step7:Put butter in a non stick pot and heat it over low heat. It's the same with vegetable oil without butter (but it's better not to use canola oil. This oil tastes too much).
Step8:Stir fry slowly until the bean paste dries quickly. I don't like sweetness very much. A friend who likes sweetness can put more sugar than the sugar in my picture. Friends with uncertain sweetness can taste and add sugar.
Step9:Add sugar and continue to stir fry over low heat until the sugar melts. When stir, the bean paste will no longer stick to the silica gel shovel.
Step10:Take a fresh-keeping box and spread it with fresh-keeping film. Put the bean paste in it and smooth i
Cooking tips:Red beans should be soaked at least one night (more than 12 hours). Then it must be boiled to a soft and rotten state. It will become mud with a little pressure. Don't add sugar too early when frying. Add sugar when the water is almost out of time. Stir fry the sugar and it will be filled. If the bean paste is not used for the time being, it can be made into balls directly and stored in the refrigerator and freezer. There are skills in making delicious dishes.
