There's a fat silver carp roaring at home. I think the whole stew is too boring, so I made two fish head soup and one sweet and sour silver carp fillet.
Step1:I have washed the scales when I bought them. First of all, I cut the fish head and tail to make soup. Then I cut the fish fillet along the fish bone to make fish fille
Step2:Marinate the fish head and tail with cooking wine and starch for a while, then fry them in the pot and ginger slices into golden yellow on both sides. Add boiling water. It must be boiling water. Stew in low heat for 15 minutes
Step3:Add papaya and sophora flower, boil for another two or three minutes, add salt, but it's not recommended to put sophora flower. The soup turns from white to green
Step4:Fish slices are marinated with cooking wine, starch, egg white salt for half an hour, as shown in Figure 2. Slice cucumber, clean agaric, prepare sugar and vinegar juice, that is, two spoonfuls of raw vinegar, half spoonfuls of sugar, a little tomato sauce and a little salt, and mix well
Step5:Stir fry sliced fish in hot oil with shallot and garlic, then add in cucumber and agaric, stir fry gently, or the sliced fish will be easily broken and turn white, and then add in sweet and sour juice and starch to make it out of the pot
