The Chinese toon fish was originally fried with eggs. Here's vegan version. It's pure without eggs. It is similar to the fried mushroom recommended in the vegetarian book.
Step1:Rinse Chinese toon with boiling water for half a minute (the content of nitrite in Chinese toon is high, which can be removed by blanching). Remove the root, and do not cut it off. One plant is separated for us
