Step1:Scratch the tuna on the front and back. Smear it with salt. Cut the ginger and sprinkle it on the fish. Marinate it for an hour. I bought it in the evening. So I put it in the refrigerator overnight.
Step2:Mix the raw soy sauce, sugar, cooking wine and water in the proportion of 2-1-2-5 (according to your preference, I made it casually, without any scientific basis) to make the juice for standby
Step3:In a hot pot, fry the fish in cold oil over a low heat. Fry each side for about 40 seconds. Fry until golden brown. I fry each side twice. Then pour in the juice and ginger. Boil over high heat. Turn over every 30 seconds or so until the juice is collected. Turn off the heat. Then remove the ginger. Like pepper. You can sprinkle some on it. Hee hee. Finish work. It tastes good.
