Pumpkin pie filling is a bit like egg tarts. The milk with cream is much stronger. As long as you can make a pie. The stuffing in it can give full play to your imagination and create your own taste.
Step1:Soften butter at room temperature. Add in sugar and flour with low gluten. Knead to form cornmeal as shown in the figure.
Step2:Add milk. Refrigerate in a fresh-keeping bag for 20 minutes. Just a ball. Don't over knead it.
Step3:Peel pumpkin, remove seeds, cut into small pieces and steam. When it's cool and warm, mix with sugar, cream, egg and low gluten flour with a blender. If you don't have a blender, you can sift the steamed pumpkin into a fine pumpkin paste. Add sugar, cream, eggs and low gluten flour and mix well.
Step4:It's much more convenient to use the cooking machine. The filling is very delicate in ten seconds. Put it aside.
Step5:Take the skin out of the freezer and roll it into a 0.3cm thick and even patch.
Step6:Move the dough onto the pie plate. After the bottom is fitted by hand, the side should also be close to the pie plate. Roll the pie plate with a rolling pin to remove the extra dough.
Step7:Give it a little more shaping. Make the leather fit the whole pie plate. Make a hole in the bottom of the fork.
Step8:Preheat the oven 180 degrees. Pour in the pie stuffing. Knock it lightly. Knock off the bubbles. Prick the bubbles on the surface with a toothpick. 180 degrees lower 10 minutes. 150 degrees 30 minutes. The filling in the middle will bulge like an egg tart. It doesn't matter if it cracks slightly. It can't be seen if it retracts when it's out of the oven. There are more skins and fillings. Just make a few small ones.
Step9:After a little cool, the surface can be decorated with moistureproof sugar powder.
Cooking tips:1. Send the skin into a ball. Don't rub it too much. 2. When rolling the skin, spread thin powder to prevent sticking. 3. If the pie plate is not made of non stick material, it should be greased first to prevent sticking. 4. Pumpkin itself is very sweet. So the recipe is for reducing sugar. It's also for eating healthier. The sweet one can be properly added with sugar. 5. Don't throw away the extra pie. Please refer to my recipe. Use the extra pie to make sugar biscuits.
