Step1:Add sugar to the yellow peach puree. Stir over low heat until melted.
Step2:Soak the gelatine in ice water and heat it in the puree until it melts.
Step3:Cool the puree. Pour in rum.
Step4:Beat whipped cream to six parts. Mix in the puree several times.
Step5:Put a slice of Qifeng cake into the eight inch Qifeng mould. Pour in mousse filling. Fill it with about eight minutes. Flatten it and refrigerate it for molding.
Step6:Crystal layer production - boil 200 grams of orange juice. Put the gelatine slices in ice water. Mix until they are melted. After cooling, pour the crystal layer on the surface of mousse. Continue to put it in the refrigerator and refrigerate to form. Finally, decorate the surface with yellow peach slices.
