I like the sweet smile of my family in the morning. We are sitting at the dinner table together. A glass of milk and a bagel. It's refreshing and warm. It's not so cold and boring in winter. When I first saw the Free-made bagel, I fell in love with this simple doughnut like bagel. It felt like a cold winter suddenly shining into a warm sunshine. I like it without too much decoration. I like its simple beauty. A kind of rural warmth filled my happy morning. I like the feeling of hand kneading. It seems that the dough is more sweet. I also like the feeling of kneading the dough in my hand. I watch the dough in my hand become the shape I want. It's like the plasticine I kneaded when I was a child. It's fun. Step1:Mix water and yeast. Stir until yeast melts completely (water temperature 40 ℃). Mix all dry ingredients together with melted yeast and water. Knead into a smooth dough.
Step2:Add butter. Knead until the flour is expanded (the film can be pulled out). Because the dough contains wholemeal. The accuracy is better than that of the previous white flour foundation. And the bagel has less moisture in the dough. So I just rub it to the expansion stage.
Step3:The dough is divided into 10 parts. 80g / piece. After rounding, relax for 15 minutes. (be sure to cover the film when it is loose
Step4:Roll the relaxed dough into an oval shape in two directions with a rolling pin. After turning over, fold it inwards from one third of the top to the bottom. Then fold it in half. Press the joint tightly with the palm root.
Step5:Rub the dough to about 25cm long. Press one end with a rolling pin. Circle and put the other end on the dough. Wrap the dough with the flattened part and close the mouth.
Step6:Place the dough on a cloth lined baking tray. Place it in a warm and moist place and ferment for about 30 minutes. Boil sugar water during dough fermentation. Bring sugar and water to a boil and turn to a low heat.
Step7:Put the fermented shell fruit in sugar water. Cook it for 30 seconds with the surface down. Turn it over and cook for another 30 seconds. Drain the boiled shellfish with a leaky spoon and arrange on the baking tray.
Step8:Immediately send it to the preheated oven of 200 ℃. Middle layer. Heat up and down for 20 minutes.
Cooking tips:If the bread is slightly colored in the baking process, cover it with tin paper. The smooth surface is upward. The matte surface contacts the bread. The baking time is over.
